I've been wanting to try that same method on my Traeger!

Had some amazing tacos al pastor in Baja several years ago....

Yeah, growing up in San Diego I’ve had some good al pastor, and it was really impressive how authentic it turned out. Even my bro in law from Oaxaca said it tasted just like in Mexico

I did a regular smallish fire until it hit about 300. Then let it even off and drop to about 250-260. I threw some cherry wood on the coals and left the door cracked and it held 250 for about 3 hours. I wrapped them, and put the door all he way in for another 4 hours. It was way tender, pretty mild smoke flavor but they were still super good. I was way impressed how it held the temp with no fluctuation. The floor space got crowded which was my only complaint but still, 3 sheet pans in here ain’t too shabby.

Okay, maybe y’all are getting tired of the posts but another fun recipe I tried was homemade gyros for the 4th. I did some lamb following Alton browns recipe, and made my own homemade flat bread and of course the toppings. They turned out really well as a whole, although the meat was slightly under flavored for my liking but worked well with the tzaziki sauce and toppings. Thanks. I assumed the fresh hot bread would make it better but it far exceeded my expectations. And they poofed up super quick, only took about a minute or so doing them 2 at a time which is what I could handle. I’m definitely gonna try it out again.

Plenty of cooking has happened in there over summer and fall. Been dying to try a turkey and rib roast in there and I wasn’t disappointed.
