I did exactly one batch of sausage stuffing with the meat grinder before I went out to buy a stuffer. Well worth the money.

We've been really enjoying smoking a lot more dishes that we use to just bake in the oven.

We picked up a pan of Costco's Mac n Cheese last week and smoked it on our pellet grill. That was seriously an amazing meal. Tonight we smoked a pan of Tuscan chicken that my wife made.

I think we are gonna smoke everything from now on.

I have a bone in pork shoulder in brine, in the fridge now. Going to smoke it tomorrow. The brine is pretty simple, equal amounts of salt & sugar in hot water, with some added apple cider and a bit of Worcestershire sauce. I added a little Traeger rub to the brine and injected the brine into the shoulder. Going to let it sit over night, then throw it on the Treager tomorrow morning... I'll keep you all posted! :D

Alright enough is enough you guys are killing me, not sure I need/want to spend the money on a pro series traegar but I can pick up a new traegar tailgater for around $360. Anyone have experience with this one? Think it would suffice? My wife is vegetarian so often i'll just be smoking for myself, with the occasional use for gatherings.

I know nothing about smoking so looking for you experienced folks opinion if that would work since I can stomach that price.

Bonus with the fold down is I could stow it under my stairs

I'm using a Tailgater and it's plenty for almost everything, the only thing I can't fit is a Beer Can Chicken, sitting upright. I'm pretty sure I could fit a decent sized Turkey on the Tailgater, but haven't tried yet. My thought was that a Tailgater would be a good (cheap) start to pellet grills and if I really liked it, I could upgrade to a bigger one. And now, I want to upgrade! X-D But really, the Tailgater is plenty for my needs.

I'm a Treager fan, but there are other comparable pellet smokers out there that are cheaper.... like Green Mountain Grills and Pit Boss.

Another Pork shoulder butt on the spit. This is what guys without smokers do. Brined with salt and brown sugar all night. Seasoned with garlic, olive oil,and my own rub with rosemary mixed in. Check out the Camp Chefs too. Just make sure you get one with an ash clean out system.

I'll check them out, i'm of the buy once cry once mantra. Mostly looking at Traegar's because I can get a bit of a deal on them. I'll check out the others though

Edit: hmmm looks like I can get an even better deal on camp chef any suggestions on model from them?

I have the Smoke Pro 24 size. It's plenty big enough for a turkey smoke. The 20 is their portable model. The big difference in that one is the size of the hopper. You would have to refill the hopper with pellets if you smoked something for more than say, 5 hours. You could still fit a lot of meat on there though.
