South-West Utah St George trip planning

We have an upcoming St George trip, and I am looking for some planning help.
We will have 3 days.
3 vehicles, least capable being a stock newer 4runner.
We will have a grip of children between the families.

Plan to see Snow Canyon state park, maybe Zions.

We want to do some trails as well. What are fun trails that are fairly easy??

Fun trails for stock would be East rim trail and west rim trail. Or just play on the dunes. Or the Honeymoon trail is scenic as well as for stock vehicles.
