Mi Ranchito is excellent to if you're looking for a sit-down type of restaurant. They have the best tacos I've ever had.
Ricardo's is good to, but I don't know if they're in Provo. Orem's close enough

Mi Ranchito, hands down. If you're looking for something quick and huge, then Beto's is where it's at.
