Are you guys cooking anything special for Christmas? I've got my parents and probably a brother coming the 24th and am trying to decide what to make. I've been watching prime rib videos this morning but don't know about spending the money. I usually would do tri tip but I just did that ten days ago.

What are you guys cooking?

My wife informed me that I am doing a Prime Rib again. We usually do Prime Rib every year.

That’s funny. I’m doing prime rib as well. I was just about to ask if anyone has a great recipe. Ive done a few of them now and it’s always good, but I think I’ve always made them too bbqy, if you know what I mean. I get little to no juice and I really want dipping juice. I’d really like this one to taste like it came from a high end restaurant.
So I can either cook it in the smoker (little to no smoke) or bake it in the oven. Someone point me in the right direction please.

My wife told me she thinks I ought to smoke something but she also wanted ham. When I told her to go get the ham she gave me puppy dog eyes and said she didn't want to spend all her money on a honey baked ham. lol. I knew/know thats what she wants but for the cash I know I can do way better on beef. Last year she told her dad to get one and he bought something that tasted like shoe leather.

Looks like my list for Saturday is my parents, my brother and his wife and 2 little kids, my family , and a couple sister missionaries. Not too bad. I fed three Elders last year and they put some food away...

Try smoking a ham it is delicious! I’ve made a few versions based around this recipe:

My neighbor did one of these Wagyu Picanha's over the summer and it was killer. Decided to do our own for Christmas dinner. I cannot wait to screw this up! (JK, it'll be easy)

Well, pulled it out a couple weeks ago then decided to save it for Christmas so it just came back out today. :D

I've never heard of salt river ranch. Are they as "premium" as snake river?
No idea if they are as "premium" as I've never had anything from Snake River, but we've been ordering from Salt River for nearly 2 years now and love what they have. Now we live close to 30 min away from them. They are a small family ranch and are some of the nicest people I've met.

Ok, I watched both these videos and Chef Billy won me over. I'm going to follow his instructions as close as I can and see what happens. My prime rib is 9 pounds so I figure it will take 4.5 hours on the smoker vs. his 4 hours at 8 pounds. Cooking this for our Christmas eve party. Hope I don't Scrooge it up! (see what I did there? :D )

I followed the Chevy Billy almost exactly. Turned out better than I have had before. Really happy with it. I’ve never made an au jus before and I thought this one was great. A nice hot horseradish finished it off.

One million percent doing this one again. Probably going to be a Fathers Day treat.

I put it on the grill for a few minutes to reverse sear it after smoking it. I walk in the house, my daughter asked for help with a little Christmas gift she got and a minute or two later I look out the window to see smoke pouring out of the grill. Got there just in time before it really got a gnarly char on it. Even with the mishap, it was legit.
